Hello SIP Family! We are finally having some Spring-like weather here in Utah and hoping it's here to stay! Hopefully it's warm where you are too.🌷 Speaking of Spring, it's almost Easter time and we are so excited! We loved hearing your feedback from our St. Patrick's Day blog. So for this one we decided to show you Easter basket inspo, for big kids and babies! Also, an adorable bunny nose craft with things you probably already have in your home. And does anyone else feel like Easter is such a busy holiday? I feel like my kids wake up, find eggs, then it's rushing to see grandparents. I wanted to share my favorite, easy banana muffins that are packed with protein and are great to make a day or two ahead so you don't have to worry about breakfast Easter morning. Plus, (because we can't help but share a little treat) my secret sugar cookie recipe that is fool proof and so quick. These will be a hit for your family and great for your kiddos to help decorate too!
Let's get started with the baskets! I am always trying to find things for my kids that isn't just sugar central so really the only sugar items in the baskets are the Easter necessities in our family; Peeps, Cadbury Eggs, and some chocolates. Here are the items that I found for my older girls.
Bunny ears, of course, note pads and gel pens, flip flops, bunny ears, animal face masks, bubbles and our most favorite SIP swim suits. Seriously, these are TO DIE for and exclusively designed by us! Then, for some baby ideas I just did anything carrot I could find; Carrot puffs, baby food, jellie shoes, any snacks they're into, etc. And I found these adorable bunny letter tags so my girls will know exactly which basket is theirs. They were from Target. All of the things pictured are from Target or the Dollar Store. Most of it was pretty inexpensive and you can easily get away with putting things in there that they need. Which is why I do swim suits and flip flops. They need it for summer coming up so it's an annual item. Some other ideas that would work are; sunglasses, chalk, outdoor toys, slime ingredients, kid gardening gloves and tools, beach balls, pool noodles, pool toys. (Most of these I can find at the Dollar Store).
I hope that helps get some ideas running for you! I always love to see other's ideas that I don't think of so hopefully you can find some fun stuff that is inexpensive!
Next up, these banana muffins are so darn easy! The reason.... Pancake mix!!!! I love that the dry ingredients are all in one. It makes them quick to make and I'm not making a mess. Plus I always have pancake mix on hand, and always bananas that are too ripe. Haha. My favorite brand to use is Kodiak mix. It has good ingredients and always has a good amount of protein, but feel free to use whatever mix you'd like. I try to add protein where I can for my kids because they're not the biggest meat eaters unless it comes in nugget form! Haha. Here's the recipe:
2 Cups- Pancake Mix
1 Cup- Milk
1/2 Cup- Brown Sugar
1/4 Cup- Softened Butter
2- Large Ripe Bananas, Smashed
2 Tsp.- Cinnamon
1 Tsp.- Vanilla
1/2 Cup- Chopped Walnuts (optional)
Combine all ingredients, mix well. Bake at 350° for 14-16 minutes.
Now for the sweet stuff! My sugar cookies. These are so yummy, and I don't even usually like sugar cookies. Lol. What I like best with this recipe is you don't have to chill the dough. Making my life easier one cookie at a time. I love making these for family parties. My kids can either help decorate them or I can make them a day or two ahead and you can freeze them until you're ready to frost. This was top secret but I'm sharing to all our SIP friends. And for a tip, you want to under cook sugar cookies a bit if you like them really soft. If you make this recipe, they only need to be in the oven for about 7-8 minutes. The goal, is to not have any browning on the bottom of the cookies. So just keep your eye on them so you can have some super soft cookies! Here's the recipe:
1 Cup- Butter
1 Cup- Sugar
1 Tsp.- Vanilla
2 Tsp.- Baking Powder
3 Cups- Flour
Preheat oven to 375°. In a large bowl cream together butter and sugar. Beat in egg and vanilla. Mix baking powder and flour together in a separate bowl and add one cup at a time to butter mixture. Do not refrigerate dough. Roll dough into 3/8 thickness, cut into desired shapes, and place cookies on a partchment lined baking sheet. Bake for 7-9 minutes.
3/4 Cup- Butter
1- Egg White (pasteurized if desired)
1 Tsp.- Vanilla
11oz.- Powdered Sugar
Mix butter, egg white, and vanilla. Add powdered sugar. Mix well.
